Lemon Rubbed Oven Roasted Chicken
A Favorite Restaurant Chicken Recipe
Preparation time: about 1 1/2 hours. Serves 4.

Cooking Conversion Table

Ingredients:
# 4 half chickens
# 2 lemons, quartered
# 1/2 cup melted butter
# 1 1/3 teaspoons salt
# 1/2 teaspoon pepper
# 1/3 tablespoon paprika
# 1/4 cup sugar

Instructions:
# Rub chicken halves inside and outside with lemon and brush with butter (this makes it a secret restaurant recipe :-) )
# Mix dry ingredients and sprinkle over chicken
# Bake in upper third of oven at 475 degrees F for 25 minutes
# Pour off any accumulated juices and rotate the pan 180 degrees F to ensure even browning
# Reduce the heat to 375 degrees F and move the chicken to the middle rack of the oven
# Continue to roast until the juices run clear when you pierce the thigh meat with a knife and the chicken is almost a mahogany color and the drumstick moves easily (approximately 30 minutes longer)

Stories of Volunteerism- Rebekah


I fostered greyhounds for six years in DC and then Boston (with Greyhound Welfare). When I tell people that, I get mixed comments – but always get the same question – “how could you give them up?” Sometimes it’s hard to explain, but I usually lead with “I can save a lot more by fostering than by adopting one or two more.” And while it’s definitely true – there are other reasons. I don’t want to turn into that crazy dog lady that ends up with 20 animals and can’t take care of any of them. I also don’t want to chase off my friends and family with an insane amount of animals in my house – I actually DO want people to visit. I also can’t afford to have any more animals right now – at least, not if I want to be able to afford to care for them the way I feel I should. And also make sure I get to eat.

But there are more selfish reasons that I fostered – I got to meet a lot of really nice dogs – and a lot of great people. I made some of the best friends of my life while I was fostering (and doing other volunteer work for a greyhound rescue group). It was a great way to get to know a new area (driving all around, doing home visits – getting lost and discovering new parts of town) – and such a great way to make friends. Walking my foster dog would always lead to conversations on the street and I got to know my neighbors better (though they almost always referred to me as “that greyhound lady”). There’s an indescribable feeling that comes with being a part of finding an animal their “forever” home. To see them nervously head off with their new person one day – then run into them three-months later and see the dog they’ve become – and how the adopter has also changed. It’s just a wonderful way to feel like I had an impact in my community.

And, seriously – I met a lot of great dogs. I was involved in this rescue group when I lived in DC and then in Boston. Now that I’ve moved to New Orleans, I’ve started volunteering with a new rescue group (The Sula Foundation) – and learning about a new breed. I’m already meeting new people, forging new friendships – and yes, meeting some really great dogs. Today I met this ADORABLE pit bull puppy that would just make any heart melt. She leapt from a chair straight to the floor and landed with all four feet splayed. I just know she’ll make someone a wonderful life-long friend. And I really hope I am a part of that placement (and that I’m added to the Christmas card list).

# 3 pounds peeled potatoes cut into similar size pieces
# 1/4 cup butter (2 ounces)
# 1/4 cup whipping cream (or to your taste)
# Salt
# 1/2 teaspoon white pepper
# 1 teaspoon garlic powder
# 1 tablespoon fresh minced garlic

Instructions:
# Cover potatoes and minced garlic with cold water, and bring to a boil
# Turn down heat to allow potatoes to simmer until soft
# Pour off water or save for another use
# Add butter, cream and seasonings and mash potatoes using hand masher or electric mixer (leave a few small lumps)
# If using electric mixer, do not beat too much or potatoes will become too pasty

Ingredients:
# 36 chicken wings (about 3 pounds)
# 1 tablespoon vegetable oil
# 1/2 cup chopped onion
# 3/8 cup pure maple syrup
# 1/2 cup ketchup
# 1/4 cup bourbon or whiskey
# 1 teaspoon hot pepper sauce
# 1/2 cup mayonnaise

Instructions:
# Cut tips off wings; cut wings in half at joint
# In medium saucepan, heat oil over medium-high heat and cook the chopped onion, stirring occasionally, 5 minutes or until golden
# Add syrup, ketchup, bourbon and hot pepper sauce and bring to a boil over high heat
# Reduce heat to low and simmer, stirring occasionally until sauce thickens slightly (about 5 minutes)
# Remove from heat
# With wire whisk, stir in mayonnaise until smooth

# 3 slices of thick egg bread (or your choice)
# 2 ounces of thin sliced turkey
# 2 ounces of thin sliced ham
# 2 slices of quality Swiss cheese
# Softened butter
# 3 beaten eggs
# Powdered sugar

Instructions:
# Butter one side of two pieces of bread with softened butter and two sides of the third piece (the middle slice)
# Lay the first slice of bread down with the buttered side up
# Place 1 slice of cheese on the buttered side of this piece of bread
# Place 2 ounces of thin sliced turkey on the cheese
# Next place the piece of bread that is buttered on both sides on top of the turkey and then place 2 ounces of thin sliced ham on that piece of bread and then another slice of Swiss cheese on the ham
# Finally place the third slice of bread, buttered side down on top of the second piece of cheese
# Trim the crust from the sandwich with a sharp serrated knife
# Cut the sandwich from one corner to the other so that you have two triangular pieces of the sandwich

The History of Women's Suffrage

The time of Women's Suffrage refers to the movement of economic and political reform for women, specifically the right to vote. This movement began in the 18th century France. One of the first countries to give women the right to vote was New Zealand.


Voting rights for women were introduced into international law in 1948 when the UN adopted the Universal Declaration of Human Rights. As stated in Article 21 “(1)Everyone has the right to take part in the government of his country, directly or through freely chosen representatives. (3)The will of the people shall be the basis of the authority of government; this will shall be expressed in periodic and genuine elections which shall be by universal and equal suffrage and shall be held by secret vote or by equivalent free voting procedures.”

Women’s suffrage is also explicitly stated as a right under the Convention on the Elimination of All Forms of Discrimination Against Women, adopted by the United Nations in 1979.

“There is a word sweeter than Mother, Home or Heaven; that word is Liberty.” - Matilda Joslyn Gage

Unless you have studied Women’s History, you probably haven’t heard of Matilda Joslyn Gage. You have, of course, heard of her two close friends, and colleagues: Susan B. Anthony and Elizabeth Cady Stanton. The three of them worked very closely in shaping the early suffragist movement, though none of them lived to legally vote. I say legally because both Susan B. Anthony and Matilda Joslyn Gage challenged the laws in New York State by voting. Anthony was prosecuted for successfully voting in the Presidential election of 1872 and twenty years later, Gage was stripped of the right to vote for school boards (and serve on them), even though New York State had allowed it for some time.

Gage was the most liberal of the three. What really struck me about Gage is that, for someone who died in 1898, some of her work would still be controversial today. It is for this reason that we don’t hear much about her – certainly not at school. Of course, we don’t hear much at school about Women’s rights at all, other than about the Women’s Rights Convention in Seneca Falls, NY in 1852 – and perhaps the constitutional amendment fight in the 1970s. Gage was largely written out of the history books of her time due to her liberal ways. An example of this is the Women’s Bible – she re-wrote the bible to be less patriarchical and more inclusive. She was also the mother-in-law of Frank Oz. It was her influence that led him to write about a utopia, led by women.

Gage was inspired by the Iroquois Nation, natives of her state of New York, to set a goal for our society – the equal leadership of the sexes. The Iroquois already showed this trait and adopted Gage as an honorary member after she spoke up against their unfair treatment. She is a woman who was far ahead of her time – but without whom we may not be where we are today.

It was the this generation of women who pushed the government – including what we know now as “civil disobedience” – including refusing to pay taxes, illegally presenting at the Centennial celebration in 1876, and protesting the Statue of Liberty at its unveiling. The majority of these women never got to vote – never felt the joy of being a citizen – and never had the Liberty that Gage so desired.

If you are interested in learning more about Gage and her place in Women’s History, I highly recommend visiting The Matilda Joslyn Gage Foundation and checking out a couple of the books for sale there. My favorite is “A Time of Protest” – the time frame is 1870-1887 – but you’d think it was during the 1960s. We too often see pictures of the suffragists as old women, sitting and looking stern. These women were not just women of words, but also women of action. They did not sit around and wait for things to happen – they made them happen. This is what Women’s history is – action. We have so much to be thankful for – but also a history to look back on and ensure that we don’t move backwards.

Congressional Resolution Designating the Month of March as "Women's History Month"


Every year, the President issues a special Women's History Month Proclamation. The following resolution can be used as a model for your local school district or city council.

Whereas American women of every race, class, and ethnic background have made historic contributions to the growth and strength of our Nation in countless recorded and unrecorded ways;

Whereas American women have played and continue to playa critical economic, cultural, and social role in every sphere of the life of the Nation by constituting a significant portion of the labor force working inside and outside of the home;

Whereas American women have played a unique role throughout the history of the Nation by providing the majority of the volunteer labor force of the Nation;

Whereas American women were particularly important in the establishment of early charitable, philanthropic, and cultural institutions in our Nation;

Whereas American women of every race, class, and ethnic background served as early leaders in the forefront of every major progressive social change movement;

Whereas American women have been leaders, not only in securing their own rights of suffrage and equal opportunity, but also in the abolitionist movement, the emancipation movement, the industrial labor movement, the civil rights movement, and other movements, especially the peace movement, which create a more fair and just society for all; and

Whereas despite these contributions, the role of American women in history has been consistently overlooked and undervalued, in the literature, teaching and study of American history:

Now, therefore, be it resolved by the Senate and House of Representatives of the United States of America in Congress assembled, that March is designated as "Women's History Month. II The President is authorized and requested to issue a proclamation for each of these months, calling upon the people of the United States to observe those months with appropriate programs, ceremonies, and activities.
